Herb Parmesan Cauliflower Bites

One of the most frequently asked questions I get is "What do you eat?"

I try not to be dietary diverse but as a father of 3 always on the run, it's difficult.

I prefer to plan and prep most meals beforehand. It's easier to lose weight when you're not guessing and struggling to keep up.

But I also need to make food my family will eat. Because I want them too to eat nutritious.

This is one of my staple side dishes.

Herb Parmesan Cauliflower Bites

Ingredients

  • 1 head cauliflower, cut into bite sized pieces
  • 1/2 teaspoon pink Himalayan rock salt
  • 1/2 teaspoon freshly cracked peppercorn
  • 1 tablespoons minced garlic
  • 2 tablespoons thyme
  • 2 tablespoons rosemary
  • 2 tablespoons tarragon
  • 4 tablespoons extra virgin cold pressed olive oil
  • 1/4 cup Parmesan cheese

Directions

  1. Preheat the oven to 450 degrees F
  2. Cover a baking sheet with foil (for easy cleanup)
  3. Grease the foil covered baking sheet
  4. Mix salt, pepper, spices, and olive oil into a large mixing bowl
  5. Add cauliflower pieces to bowl and mix until coated
  6. Spread cauliflower on baking sheet
  7. Bake 20 minutes
  8. Add Parmesan cheese to large mixing bowl
  9. Return cauliflower to mixing bowl and toss in Parmesan cheese
  10. Bake 10 minutes
  11. Cool for 10 minutes
